The weekend before Christmas I went to see my family in Enid Oklahoma. Not knowing what to expect from this small town I was very pleasantly surprised at the stores verity of Gluten free Foods. So my uncle and I went to Jumbo's and found two types of Gluten Free cookie mix. Betty Crocker was 4.50 (ish) a box and the other Hodgson Mill cookie mix was 2.99, however it was your basic mix and you had to add the extras. We got the Betty Crocker because it had everything in it and well its Betty so how could you go wrong? Well you can!
I will say though the flavor was nice for being Gluten Free. It did not have that weird after flavor most Gluten Free Products have which was a surprise. I will also say though that I could only eat one or two before the texture began to bother me. Now for most people this is not going to be an issue but I am wicked sensitive to food textures and get weirded out easily. (Mu Shu Gai Pan anyone?)
Another aspect I was pleased with is the mix really looked like cookie dough when you mix it together. For me that gave me the boost I needed to insure that these cookies were going to taste like cookies. I did have to shape them into more of a round shape when i was cooking them.
Using a small ice cream scoop and spoon I was surprised on how many you can make. For instance, I had a full sheet pan and I ended up making two dozen plus three more cookies. For me a normal Cookie mix may yield a dozen and that's before we eat the cookie dough! Being Gluten sensitive, I feel disappointed when I make something Gluten Free and it turns out like a rock or the taste is less desirable. I think if you grew up like this then it would be okay but if you have to switch late in life like I have done. It can be frustrating.
The last thing I can say about these cookies is that you need to bake them exactly to the directions time wise. My first batch were very crumbly. I had to take them out of the oven because I didn't want to burn them. By the time I got back home to Tampa, my cookies were nothing more than crumbs. But hey, atleast it made it easy to pick out the chocolate chips!
