This weekend I had great ambitions to create some new tasty treats but I fell way short of doing anything spectacular. I Just couldn't bring myself to do anything amazing this weekend like I wanted to. So Instead I played video games, went shopping and looked for my digital camera that I use for this blog. Still enjoyed my ever to short weekend but it lacked in the food department and camera department.
I had gone to the store early last week and I bought a container of figs. I don't know why I had bought them. I have never used them in a recipe or even knew what the tasted like (besides the Fig Newton) but I figured I could come up with something.
I had watched a few minutes of Secrets of a Restaurant Chef with Anne Burrell and I recalled her stuffing them with cheese and wrapping them in bacon. So I figured it had to be good right? Well I couldn't find the recipe anywhere and that got me thinking "Did she even use figs? Or were they dates" Either way I had figs and they were going to be wrapped in bacon! I Just hoped they tasted alright. So Sunday afternoon I tottled into the kitchen and made these stuffed figs pretty fast. When they were finished, Test Subject A (my boyfriend) ate them up and liked them a lot. So being the brave test taster I took a bite of the fig. It was pretty good, Not OMG I must have these every week but for what they were they were okay.
When cooked the fig made the cheese take on a sweet flavor which was nice with the salty bacon. I also found the cheese was very melty and oozed out of the figs. I must say the cheese was the best part. I think if I ever did make these I would skip the figs all together and just wrap cheese in bacon as that was my favorite part. All in all I didn't go ga-ga over them, but if you want to try it, here is the recipe below.
Equipment needed
Oven @ 350
foil lined pan
Ingredients
1pkg of Figs
6 slices of bacon
3 oz of Manchego Cheese
Preheat your oven to 350.
1. Cut the figs down the middle. Be sure not to cut all the way through as this will be your pocket for the cheese.
2. Cut the Manchego Cheese into half inch to inch squares and stuff them into the figs. Your figs should look something like those down below.

3 Cut your bacon slices in half. Wrap each half slice around the figs and place on a foil lined lipped pan. Bake at 350 for 20 -30 mins until your bacon is crispy and cheese is melted.
4. Let cool and enjoy.
