Sweet Potato Crisps

This weekend can be classified as a typical one. Went to the grocery store and famers market, watched Harry Potter, and did a lot of cooking! I made homemade marshmallows and chocolate sauce, Sweet Potato Crisps and Marinaded onions. The first recipe I made was the Sweet Potato Crisps. I had forgotten that I bought some organic sweet potatoes a few weeks ago and their eyes were kinda growing so I figured I would have to use them up.

I will say though my next kitchen purchase will have to be a mandolin. Cutting these babies was hard work! They were smaller than the ones I used before so cutting them evenly was difficult. All in all they were tasty and filled the crunchy yummies you get late at night.

Ingredients
1 1/2 cups of vegetable oil (You want to make sure the chips are just covered)
2 to 3 medium Sweet Potatoes.
Salt to taste
Directions
1. Thinly Slice the Sweet Potatoes. (Roughly 1 inch thick)
2. Heat the oil in a large pot.

*Cooking Tip* If you have a Fry Daddy use it!
3. Once the oil is heated place the chips in the oil and fry for 3 to 4 minutes. Be careful due to the high sugar in sweet potatoes, these chips will burn quickly!
